"Slow Wood Food " exhibition
We present the value of the processes of fermentation through the
demonstration of a new, large, wooden barrel vat (handcrafted and shipped
specially from Japan) and the food products closely tied to this container: soy
sauce, miso (fermented soy), sake, rice vinegar, and mirin (a sake liquor). The
event is called “Slow Wood Food – the culinary culture of fermentation handed
down by food artisans.”
Con l’obiettivo di valorizzare la profonda cultura gastronomica giapponese, Artisans of Food presenta, presso lo show-room di Slow Wood, alcuni prodotti alimentari tradizionali, simbolici, frutto dell'uso della botte lignea e del sapiente lavoro degli artigiani esperti di fermentazione. ARTISANS OF FOODは、展示会"Slow Wood Food"を開催します。木桶に象徴される日本の伝統的食材を展示、醸造家たちの仕事の価値を紹介します。会場では、小豆島から届いた木桶とともに、木桶食文化を守るための『木桶職人復活プロジェクト』も展示。海外における大いなる関心にも係らず、実際に知り、味わう機会が限られた、職人気質が活きる高品質な伝統食材を、テイスティングワークショップと組み合わせて紹介することで、奥深い日本の食文化を発信してまいりたいと思います。 |
